*3  Observed the following potentially hazardous foods to be held at improper temperatures. 1. Mayo was found at 60F at dessert station. 2. Whipped cream was found at 60F in waitress area. Observed the following food products to be improperly stored. There was no cover on tomatoes, strawberries, mayo etc on dessert cooler or for pan cake mix in cooler. Provide for all food products in storage to have proper covers or overhead protection. 750.130 Next Inspection
Observed food service employees to be handling ready-to-eat foods without minimizing direct hand contact with the food product. 1. Bowl was found in chocolate chips in the walk-in freezer. 2. Bowl was used for sugar in the dry storage roo. Food employees shall avoid direct contact with ready-to-eat food whenever possible and, to the extent possible, shall handle ready-to-eat food only with suitable utensils such as a deli tissue, spatulas, tongs, or single-use gloves. 750.280 Next Inspection
14  Observed the following improper food contact surfaces. Cutting board on dessert prep station has a lot of knife grooves in it. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored. 750.650 Next Inspection
15  Observed the following improper non-food contact surfaces. 1. Bottom of the door on Traulsen cooler has a torn seal gasket on cook line. 2. Torn seal gasket was found by warmers. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored. 750.690 Next Inspection
22  Observed the following food contact surfaces to be unclean. 1. Top of the toaster has toast debris on it. 2. Top of the knife rack has food debris on on it by flat stoves. 3. Waffle maker has food debris on it. 4. Cabinet where onions are stored has onion debris on it. 5. There is ice built up on the shelves in the walk-in freezer. Clean and maintain Next Inspection
36  Observed the following floor areas to be unclean: 1. Floor drain below prep sink has food debris in it. 2. Floor in walk-in freezer has ice & food debris on it. 3.
